Spiced Sweet Potato Bread

I always try to boil a couple of extra sweet potatoes when I am making them for lunch or dinner. The leftovers are perfect to make these delicious quick breads which are wonderful for breakfast or mid-day treat!

Spiced Sweet Potato Bread

Yield: 2 loaves

Ingredients

  • 3 1/4 cups of flour
  • 2 teaspoons of baking powder
  • 2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 3 teaspoons of pumpkin pie spice
  • 2 cups of sugar
  • 1/2 cup of canola oil
  • 1/2 cup of drinkable plain yogurt
  • 3 large eggs
  • 1 1/2 cups of sweet potato puree
  • 1/3 cup of chopped walnuts

Preparation

  1. Preheat oven to 350F.
  2. Combine flour, baking powder, baking soda, salt, pumpkin pie spice together.
  3. Combine sweet potato puree with eggs; mixing on high speed to combine well. Add sugar, canola oil, and yogurt, mixing to combine. Add flour mixture to the sweet potato mixture, beating at low speed just until combined. Pour batter into 2 (9x5) loaf pans, coated with cooking spray. Sprinkle walnuts over the batter. Bake at 350F for 35-40 minutes or until a wooden toothpick comes out clean. Cool 10 minutes in pans on a wire rack; remove from pans. Cool completely on wire rack.
